2021 Small Lot Chardonnay

This Chardonnay has a bright golden straw colour. On the nose are aromas of apricot, white peach, golden delicious, almond torte, and homemade whipped cream with a subtle layer of spice. This wine is striking in youth and will only develop more complex characteristics with time. The flavours begin with golden delicious apple, white peach, lemon peel, and salt stone with an underlying savoury fine lees character. This medium bodied wine remains vibrant with fresh minerality due to the cool vintage of 2021.
Winemaking Notes
This Chardonnay is produced from our Estate vineyard in the Twenty Mile Bench sub-appellation. The fruit was hand -sorted in the vineyard then gently whole berry pressed. The juice was cold settled for 48 hours before being racked off its lees. It was then warmed to 14 degrees and transferred into the fermentation vessels. One new French Oak barrel was used for fermentation and the remaining wine was fermented in tank. The wine was fermented using a combination of natural and cultured yeasts. Once fermentation was mostly finished, the remainder of the wine was transferred to barrel for ageing. During maturation the wine underwent natural Malo-lactic fermentation and remained in oak for a duration of 10 months. The wine was then racked off its lees and stabilized before filtering and bottling.
