Tasting Notes
This Gamay Noir is a bright ruby with a rose petal hue. The aromatics are moderately intense on this youthful wine. It has aromas of currants, sour cherry, cranberries, allspice, and a gentle oak to entice you into the glass. The palate is light bodied with soft tannins and high acidity, which is characteristic of the 2021 vintage.
Winemaking Notes
This Gamay was harvested from a neighbouring property and picked in early October. The grapes were destemmed and crushed into tank. The juice then underwent a five-day cold soak before being warmed to begin alcoholic fermentation, during which punch-downs were done twice daily. Once the alcoholic fermentation was completed the wine was then pressed off to a stainless-steel tank to settle before being racked to French barrels comprising twenty percent new oak. Malo-lactic fermentation occurred naturally in barrel and was complete by the following spring. The wine remained in barrel for ten months before it was racked back to tank where it settled prior to filtering and bottling.
Food Pairing
This wine would pair beautifully with Minestrone soup or prosciutto-wrapped figs stuffed with goat cheese and topped with a balsamic glaze.
