This Cabernet Franc was hand harvested from our estate vineyard. The Grapes were 100% destemmed and crushed into tank. The juice underwent a 5-day cold soak before being warmed up to begin alcoholic fermentation, during which pump overs were done twice daily. Once the Alcoholic fermentation was complete the wine was then pressed off to stainless steel to settle before being racked to French barrels, comprising 20% new oak. The wine was aged in barrel for 15 months before racking back to tank where it was then stabilized, filtered, and bottled.
Colour is ruby to garnet. Bright aromas of red berry fruit, cigar box, and savoury spice with a herbaceous undertone. On the palate, the wine is soft and supple with a juicy core feel. Flavours of strawberry, savoury pepper, and baking spice are backed with nicely structured acidity. Polished tannins lead to a medium+ finish.
