Tasting Note: This wine is a pale pink thanks to a splash of gamay. It has aromas of fresh green apple, candied cherry, and papaya bursting from the glass. The palate follows with flavours of strawberry and sour cherry, and a seamless balance of acid and sugar. It is a great wine to share a toast with or pair with casual fare.
Wine Making Note: Vidal fruit was harvested from our home site on October 5. It was fermented cold, using several yeast strains to promote a brighter, more complex profile. The fermentation was arrested when balance was perceived between acidity and residual sugar. Tank quickly chilled and sealed to retain maximum CO2. Bench trials concluded with a balanced blend consisting of: 94% Vidal, 3 % Baco, 2% Merlot, 1% Cabernet and a dash of Gamay.
Food Pairing: Try with grilled kebabs, pizza margherita or fresh watermelon.
