Winemaking notes:

This Pinot Gris was harvested from a vineyard in Lincoln Lakeshore, just north of King Street staying closer to the bench. The fruit was harvested and gently pressed for an optimum flavour profile. The juice was cold settled for 48 hours before being racked off its lees. The juice was then warmed to 14 degrees and underwent a cool long fermentation in stainless steel tanks, which allowed us to capture the varietal aromas and the pure expression of the Twenty-Mile Bench. Once fermentation finished naturally, the wine was left on its ferment lees for 4 months before being stabilized, filtered, and bottled.

Tasting Notes:

The Pinot Gris is light straw in colour, with a clear rim. This wine is bursting with aromas of orchard fruits such as golden delicious apple, apricot, and peach, with subtle hints of cantaloupe and honey. The palate is lively and fresh with flavours which mirror that of the nose. This dry Pinot Gris has a luscious mouthfeel, generous fruit, and a vibrant acidity and lift. Looking a little deeper, you may sense some lees aging as the wine follows through to a medium length finish.

Food Pairing:

Shrimp Ceviche is the perfect balance of mild seafood and citrus flavours that will make a delicious pairing while not overpowering the wine. Would also pair well with summer fruit salad.
