This wine has a lovely light straw colour, with a faint olive hue. On the nose, there is fresh lemon-lime citrus and tropical fruits, such as pineapple. The palate has flavours of honeydew melon and lemon with a crisp refreshing acidity balancing harmoniously with the residual sugar. A delicate spritz lifts the palate while ripe stone fruit flavours carry through to a refreshing finish.
Wine Making Note:
Vidal fruit was harvested from our estate vineyard in October and the juice was fermented at 13° Celsius to retain crisp aromatic complexities. The juice was then cold-settled for 48 hours before being racked off its lees. The juice was then warmed to 14 degrees and underwent a cool long ferment in stainless steel tanks. The fermentation was stopped early to give us a low alcohol content while balancing the residual sugar and acid. The wine was then racked off its ferment lees and stabilized, before filtering and canning.
Bring this along on all of your outdoor picnics and barbecues. It pairs wonderfully with watermelon feta salad, or grilled chicken and vegetable kebobs, as well as peach and pecan baked brie.
