This red blend has a deep ruby colour with a lighter rosehue, with a concentrated nose of ripe red and black fruitslifting out of the glass. Sweet wild raspberry, blueberry, cassis, fig, new leather, vanilla, and a faint black pepper follow through. Those concentrated fruit characteristics are mirrored on the palate with bramble berry, dates, cocoa, toasted hazelnuts, and black pepper; as well as oak nuances tantalizing the palate further. This wine is a medium bodied blend with depth and a textured mid palate. There are smooth layered tannins and a fresh balanced acidity to provide structure and focus all the way through to a medium long finish.
This Cabernet Shiraz blend is comprised of 50% Merlot (from a vineyard in Niagara-On-The-Lake), 30.6% Cabernet Franc, and 19.4% Syrah (both harvested from our Estate Vineyard). The grapes were harvested at optimum ripeness, crushed and destemmed into tank for fermentation. The wine was macerated for 28 days with pump overs, then pressed off to tank for settling before being transferred to a barrel for aging. The wine aged for 18 months, with 25% in new French oak and 75% in neutral oak barrels. Malo Lactic fermentation occurred early in the barrel aging process. After blending, the winewas transferred out of barrel, filtered and bottled.
This wine would pair well with grilled portobello mushroom, beef stroganoff, and bison burgers.
