Winemaking Notes

The Syrah was hand harvested from our estate vineyard to which we then added 7% Viognier skins to co-ferment in tank. Fermentation began after a 5 day cold soak with pump overs twice daily. After fermentation was complete the wine was then pressed off into tank to settle before racking into barrel. This wine remained in both French and American oak 25% new for 18 months before bottling. 
 

Tasting Notes

This wine is an inky purple. It is very dark and opaque. On the nose black pepper, pipe tobacco and dark chocolate jump out of the glass. On the palate it is a little softer than expected but still showing some grippy tannins. With time the tannins in this wine will soften. As you swallow it finishes with a peppery aftertaste. Food Pairing

This wine would pair beautifully with BBQ pepper encrusted steak, Garlicky Toulouse sausages and Grilled stuffed Eggplant
