This wine is an inky purple. It is very dark and opaque. On the nose black pepper, pipe tobacco and dark chocolate jump out of the glass. On the palate it is a little softer than expected but still showing some grippy tannins. With time the tannins in this wine will soften. As you swallow it finishes with a peppery aftertaste. Wine Making Note
This wine is a blend of Viognier and Syrah. The already pressed skins of the viognier were fermented with the Syrah creating a dark, intense red wine. It was pumped-over twice daily for 3 weeks. It was then pressed off and put to rest in barrels for 18 months.
Try this wine with grilled rack of lamb. It would also be great with BBQ pepper encrusted steak.
