Winemaking Notes
The Vidal grapes were left to hang into winter, and picked once temperatures dropped to -10° Celsius. These sweet little grapes were then pressed with the juice coming out at 37.1 brix. The juice was then transferred to a stainless-steel tank for cold settling. The juice was then racked off to another tank for fermentation. The fermentation was stopped when the perfect amount of sweetness was tasted in balance with the natural acidity. The wine was then stabilized, filtered, and bottled.
Tasting Notes
Colour is brilliant gold straw. Bright aromas of ripe cantaloupe and dried apricot with hints of candied peach and wild flower bouquet. The palate continues with notes of apricot and stone fruit. Rich and opulent mouthfeel with medium acidity helps to keep the palate cleansed.

Try with Fresh pear, blue cheese and duck confit or with artisanal peach pie.
