Silver Award Winner @2023 Finger Lakes International Wine & Spirits Competition
This unoaked Chardonnay has very light straw hue with a clear rim. Expressive notes of lemon, pear, honeysuckle lift from the glass. The palate is crisp, and light bodied with a slight creaminess. Poached pear, yellow plum and almond flavours are complimented with a saline citrus and oyster shell like minerality. There is a bright acidity which helps carry the flavours through to a medium finish.
These grapes were sourced from 25-year-old vines planted on the Wismer Foxcroft Vineyard. The property is a steep, stony silty and dolomitic limestone site roughly 5 km from Lake Ontario. The fruit was hand harvested and gently pressed for optimum flavour profile. juice was cold settled for 48 hours before being racked off its lees, then warmed to 14 degrees and fermented in stainless steel tanks. Once fermentation finished the wine was racked off its ferment lees and stabilized, before filtering and bottling.
