Vidal fruit was harvested from our estate vineyard in October. It was fermented cold, using several yeast strains to promote a brighter, more complex profile. The fermentation was arrested when balance was achieved between acidity and residual sugar. We then blended a splash of gamay to give it that beautiful pale pink colour. The remaining CO2 from fermentation was captured in tank to add a delicate spritz to the finished wine.
This wine is a pale pink thanks to a splash of gamay. It has aromas of fresh green apple, candied cherry, and papaya bursting from the glass. The palate follows with flavours of strawberry and sour cherry, and a seamless balance of acid and sugar. It is a great wine to share a toast with or pair with casual fare.
Bring this along on all your outdoor picnics and barbecues. It pairs well with watermelon feta salad, or grilled chicken and vegetable kebabs.
