We may be brave and plant more, but for now this is the last Merlot produced in the Rockway Vineyards. Merlot is very sensitive to the cold, but when it produces, the wines are stunning.
Colour is deep ruby. Layered aromas of blueberry, leather and spice with nuances of French oak. Palate is rich and velvety with polished tannins and acidity to keep the wine fresh. Flavours of dark berry fruits, tobacco and savoury spice kissed by fine French oak. Medium+ finish.
Wine Making Notes
The grapes were hand harvested and de-stemmed into small batch vessels. A 5 day cold soak lead into inoculation with selective yeasts. The musts were punched down twice daily for the duration of fermentation. Once the caps began to fall, the wine was drained off skins and skins were pressed off in our bladder press. The finished wine was left to settle before being racked into barrels to undergo malo-lactic fermentation and 18 months of ageing.
Food Pairing Try with duck confit, wild mushroom pizza or prime rib.
