“These two varietals are so different, yet they compliment each other in so many ways. Texture and finesse from the Chardonnay are seamlessly integrated with the racy acid and bold stone fruit of the Riesling. Give and take ends with balance in this relationship. - Winemaker
Tasting Notes Up front there are soft aromas of vanilla and butter, shadowed with lemon, peach, green apple and subtle hints of toasted oak. The palate is soft and inviting yet has a vibrant and spry feel thanks to the wines acidity. Flavours of lemon, pear and vanilla bean lead to a balanced finish that leaves the mouth watering for more.
Winemaking Notes A blend of 59% Chardonnay and 41% Riesling. The fruit was harvested, destemmed and pressed into stainless tanks to settle. The Riesling was racked and fermented at cooler temperatures to promote intense aromatic character. The Chardonnay was barrel-fermented in neutral barrels using indigenous yeasts. Furthermore, it was aged in barrel for 6 months and the lees were stirred monthly to increase the texture and mouthfeel. The wine was assembled to create texture and balance from the Chardonnay with the aromatic qualities of Riesling.
Food Pairing Try with mussels steamed in broth made with this wine. Also try with sharp cheeses and artisanal charcuterie.
