This Cabernet Franc was hand harvested from our estate vineyard. The Grapes were 100% destemmed and crushed into tank. The juice underwent a 5-day cold soak before being warmed up to begin alcoholic fermentation, during which pump overs were done twice daily. Once the alcoholic fermentation was complete, the wine was then pressed off to stainless steel to settle before being racked to French barrels comprising 30% new oak. The wine was aged in barrel for 15 months before racking back to tank where it was then stabilized, filtered, and bottled.
This Cabernet Franc has a garnet colour with a ruby hue. Red plum, black currant, dried herbs, and sweet tobacco on the nose. A concentrated medium bodied red wine, with a textured mid palate and layered velvety tannins. The palate shows notes of red and black fruit, white pepper, toasted oak, vanilla, and nuances of sweet tobacco that carry through a medium length finish. Secondary complexities persist in the background and will continue to evolve with time. (Tasted May 2021)
This wine would pair beautifully with an herb crusted rack of lamb with asparagus, Smoky BBQ Brisket, or black beluga lentil dishes.
