WINEMAKING NOTES:
The fruit for this wine (67% Chardonnay, 33% Pinot Noir) was hand picked in early September during the 2015 vintage. The grapes were pressed and co-fermented together and then aged in stainless steel tanks with zero malolactic fermentation. Bottling occurred in March of 2016, with the secondary fermentation lasting 6-8 weeks. These bottles were then aged for 32 months on its lees before disgorging. The bottles were then topped with wild barrel fermented Chardonnay from our Estate vineyard.
TASTING NOTES:
The colour is brilliant pale straw. Up front on the nose are aromas of green apple, sliced Flemish Beauty pear and brioche. The palate is vibrant and fresh with a focused acidity. Soft and balanced sparkling wine with medium fine bubbly mousse. Palate mimics nose with concentrated flavours of apple, pear, lemon zest, with delicate hints of toasted almonds, and a smooth medium finish.
FOOD PAIRING:
Sparkling wine is versatile and can be paired with most dishes. It goes hand in hand with oysters, smoked salmon, or caviar. Also goes great with Chinese food.
