A lively Riesling with a pale straw colour. White peach, apple blossom, and wet slate lift from the glass. On the palate there is ripe peach, golden delicious apple, apricot marmalade, and lemon zest. An off dry wine with balanced acidity and a beautiful minerality that lingers through a persistent smooth finish with beautiful tension. (Tasted July 18, 2021).
This wine was produced from our Estate grown Riesling. The grapes were hand harvested and gently whole cluster pressed for pan optimum flavour profile. The juice was cold settled for 48 hours before being racked off its lees (heavy sediment). The juice was then warmed to 16 degrees to begin fermentation in stainless steel tanks. The long cool fermentation (12-14c) allowed us to capture the varietal aromas and the pure expression of the Twenty Mile Bench terroir. The fermentation was stopped just before they would have naturally finished to achieve the perfect balance between residual sugar and the vibrant acidity. The wines were then blended before stabilizing, filtering, and bottling.
This wine lends itself to a variety of pairings including sushi, spicy foods such as curries, simple summer salads; our wine club recipe: fried Guernsey Girl Cheese with grilled vegetables and locally sourced yellow plums.
