Tasting Notes:

Deep maroon with a ruby hue. On the forefront of the nose there is a beautiful floral lift of African violets coming through from the viognier skins co-fermented with this Syrah. Following both on the nose and palate is a dominant profile of brambleberry, plum, and fruitcake. A full-bodied wine with balanced acidity and velvety tannins. Cigar box, graphite and coco follow through in a lasting finish. (Tasted May 2021)

Winemaking Notes:

The Syrah was hand harvested from our estate vineyard to which we then added 7% Viognier skins to co-ferment in tank. Fermentation began after a 5-day cold soak with pump overs twice daily. After fermentation was complete the wine was then pressed off into tank to settle before racking into barrel. This wine remained in both French and American oak 25% new for 18 months. Malo Lactic fermentation occurred during the early months of barrel aging. The wine was then racked to tank and filtered before bottling.   

Food Pairing:

This wine would pair beautifully with BBQ pepper encrusted steak, Garlicky Toulouse sausages and Grilled stuffed Eggplant
